Andouilette

 Say bonjour to the Andouillette, a sausage that separates the tourists from the locals!

Made from finely cut pork (including bits you’d normally send thankyou cards to your butcher for removing) and seasoned with pepper, wine, onions, and other spices. Andouillette is a bold, traditional sausage that’s been loved and feared in Mayenne for generations.

Grilled to crispy perfection and often served with mustard, pommes de terre, and local cider, it’s the ultimate "when in Rome" moment... or in this case, when in Mayenne.
